Our story begins with an ancient legend of the Aztec people, who ruled over a vast empire in central Mexico from the 14th to the 16th century. The Aztecs had a rich and complex mythology that shaped their culture, worldview, and rituals. One of their most important gods was Quetzalcoatl, the feathered serpent, who was the patron of wisdom, life, knowledge, and the arts. He was also associated with the wind, the morning star, and the west direction.

According to legend, Quetzalcoatl once visited the legendary city of Tollan, where he learned from the wise and noble Toltecs, who were the originators of all culture. There he met a beautiful princess named Xochiquetzal, who was the goddess of flowers, love, and beauty. Quetzalcoatl fell in love with her and wanted to marry her, but she was already betrothed to his brother Tezcatlipoca, the god of night, sorcery, and discord. Tezcatlipoca was jealous and angry at Quetzalcoatl's desire for Xochiquetzal, so he devised a plan to trick and humiliate him.

Tezcatlipoca disguised himself as an old man and offered Quetzalcoatl a drink made from fermented agave juice, called pulque. Quetzalcoatl accepted the drink, not knowing that it was spiked with a powerful hallucinogen. He drank too much and became intoxicated, losing his senses and his dignity. He then went to Xochiquetzal's palace and seduced her, breaking his vow of celibacy and dishonoring her. The next day, he realized what he had done and felt ashamed and remorseful. He decided to leave Tollan and wander the world as a penitent.

As he wandered, he came across a humble village where he met an old woman named Tlazolteotl, who was the goddess of filth, sin, and forgiveness. She recognized him as Quetzalcoatl and offered him a place to stay. She also offered him a way to cleanse his soul from his sins by confessing them to her. Quetzalcoatl accepted her offer and told her everything that had happened in Tollan. Tlazolteotl listened to him with compassion and absolved him from his guilt. She also gave him a gift: a corn tortilla filled with meat, cheese, salsa, and vegetables. She said that this was a taco, a traditional food of the people of Mesoamerica. She said that this taco was special because it contained all the flavors of the world: sweet, sour, salty, bitter, spicy, and savory. She said that this taco was a symbol of harmony, balance, and joy.

Quetzalcoatl tasted the taco and was amazed by its deliciousness. He felt a surge of energy and happiness in his body and mind. He thanked Tlazolteotl for her kindness and generosity. He then decided to share this wonderful food with the rest of humanity as a way of spreading his wisdom and love. He traveled across the lands teaching people how to make tacos and enjoy them with gratitude and respect. He also taught them how to cultivate corn, beans, tomatoes, chilies, avocados, and other crops that are essential for making tacos.

One of his disciples was an Aztec chief named Omeyocan (meaning \"place of duality\"), who was a brave warrior and a wise ruler. He learned from Quetzalcoatl how to make tacos using the best ingredients available in his region. He also learned how to honor the gods by offering them tacos as sacrifices. He became famous for his tacos among his people and his enemies alike. He named his tacos after himself: Omeyocan Tacos.

Omeyocan Tacos are still made today following the ancient recipe taught by Quetzalcoatl himself. They are made with fresh corn tortillas (made from nixtamalized corn), tender meat (beef or chicken), melted cheese (queso fresco or cheddar), spicy salsa (made from tomatoes, onions, garlic, cilantro, lime juice, salt, and chilies), crunchy lettuce (romaine or iceberg), creamy guacamole (made from avocados), and tangy sour cream (or yogurt). They are served hot with a slice of lime on the side.
